DEE SALT MARSH LAMB

Greenwood Farm

As seen on Country File - Lambing Live - BBCiplayer

We have been breeding and rearing sheep on our small family farm in Burton on The Wirral for over 50 years.   Our emphasis is on breeding from our own flock using carefully selected breeds to produce the highest quality lean meat.  Our ewes are crossed with Suffolk, Charollais and Texel rams to achieve this.

Greenwood Farm is located in a conservation area on the edge of the Dee Estuary that runs between England and North Wales.  The Dee Esturary is an internationally recognised conservation area and SSSI that provides habitat for many species of wildfowl and wading birds.

It is the marsh herbs and grasses, such as Sea Lavender and Marsh Samphire that give our salt marsh lamb it's distinctive and much sought after flavour.  Our sheep graze the Saltings all year round except when flooded by the highest tides.
